I am a single mom who’s been recently been laid off and have been claiming
unemployment benefits and have been taking a couple training classes that have been funded by the state.

Unemployment benefits are ok because those are things you have paid into by virtue of having been employed in valid status. THere should not be any negative impact from this on your future application for naturalization. If you want to discuss this further, feel free to contact me directly .
